Sentries are a little more complex. These are NPCs that carry warhorns that they can use to alert other enemies, essentially ringing an alarm bell to warn that there is a criminal in the area committing some bad crimes. It will not take long for reinforcements to zone in on your location, punishing you more severely for getting caught. You cannot simply kill a sentry after they sound their horn and disappear into the shadows. At the very least, it will be much more difficult.
It is possible, however, to pickpocket the warhorn from them beforehand to avoid it being sounded, and, as shown above, you can easily make your way out of sentries since the warhorn is attached to their belt. However, if pickpocketing is not your thing, you can always assassinate, choke, or stagger them to prevent the alarm from being sounded. They can be found among the Thalmor, Imperials, Stormcloaks, and bandits of Skyrim.
Finally, the mod introduces takedowns, which are sneak attacks from behind that can be used when unarmed. Although it does not work on essential NPCs and is currently in the experimental phase, it “repurposes killmove behavior and uses behavior input to detect takedowns”.
